'10 Kit's Killer Cab
The 2010 vintage marks our first year of making wine from our Howell Mountain Estate Cold Springs Vineyard. Although we continued to source a portion of the fruit for this wine from Clark-Claudon as we have in past years, the majority of the Cabernet Sauvignon is from our Cold Springs Vineyard which we began farming in 2010.
2010 was a difficult harvest throughout California beginning with a cool spring that delayed bud break in most locations. The cool temperatures continued into June with far more severe frost than average. A heat spike in August sent temperatures soaring, taking a toll on many vineyards throughout the valley. Cool weather began in late September, delaying harvest for our Cold Springs Vineyard until October 28th. Although a challenging harvest, the wines are
proving to be elegant and well-structured with ample fruit.
The fruit from Clark-Claudon was picked in mid-September and the fruit from our Cold Springs Vineyard was picked early in the morning on October 28th. After arriving at the winery, the fruit was hand sorted and given a three day cold soak to extract more fruit from the grapes.The juice was fermented in five ton fermenters for ten days and left on the skin for 21 days when it was gently pressed off the skins and allowed to settle for a day before being put in barrel. The wine was aged in 85% new French oak and 15% once used French oak for 20 months. Our winemaker added 10% Oak Knoll Merlot to create the final blend.
This well-structured and elegant wine exhibits aromas of blackberry pie, dark ripe cherries and vanilla bean. The palate is abundant with brambly blackberry and black cherry and a hint of sandalwood. The wine is ready to drink now but will continue to age nicely for the next 6-8 years.
